Cauliflower, the “It” Food

Oprah has her O, That’s Good! pizza where part of the crust is made with cauliflower. Jessica Simpson credits a cauliflower-rich diet with her 100-pound weight loss after giving birth.  Cauliflower is the “it” food right now. Because cauliflower can mimic the consistency of the food it is imitating, softened like mashed potatoes and grated to resemble rice, it is a healthier substitute for many foods. “Cauliflower is a great swap in so many comfort food dishes” according to chef Katie Lee. Due to the vegetable’s popularity, snacks made with cauliflower have popped up everywhere. From the Group Up makes crackers with cauliflower and Vegan Rob’s has Cauliflower Puffs, both are gluten free, dairy free, and non-GMO.
