I am not a vegetarian, but I love Amy’s Breakfast Scramble. The tofu, mixed with broccoli and mushrooms, looks and has the texture of scrambled eggs. The country-style potatoes are spiced with the skin on and surprisingly moist. I was a little afraid to try the meatless sausage but was very impressed. They taste like maple sausages. The maple syrup, agave and natural hickory smoke flavor make them savory. It is a hearty breakfast made even greater because it is dairy free, gluten free, tree nut free, vegan and kosher.

There are so many things to like about these waffles–they are Paleo, grain free, dairy free, gluten free, soy free, and have no trans-fat or added sugar. The waffles are tastier than I thought they would be and are low carb at 19 carbs for 2 waffles. They are made from tiger nut flour, which I had never heard of. Not technically a nut, it is a root vegetable that grows in Northern Africa and the Mediterranean.
Nature’s Path Pumpkin Spice Waffles
These waffles are gluten and dairy free with a great pumpkin taste. They are crispy and go perfectly with Earth Balance vegan butter. Because of the pumpkin spice flavor, they don’t really need syrup. And I love that Target carries them all year round, not just in fall.
