Along with games and rides at a carnival or state fair, you can also expect to find corn dogs. According to Rod Phillips, professor of the history of food and drink at Carleton University, “the classic food on a stick in America is the corn dog.” Because they are made with corn flour you might not expect wheat flour to be added. But most recipes blend cornmeal with wheat flour to improve the gritty texture. Two brands, Foster Farms and Applegate, offer gluten and dairy free corn dogs.  Whereas one is delicious, the other is disappointing.
