Butter was so important to the Norsemen that they were buried with it to take into the afterlife; archaeologists have found buried barrels of butter in Europe; and Scandinavian butter was used as oversea commerce in the 12th century. It’s not surprising that butter was considered a precious commodity. Can you imagine common foods like bread, waffles and popcorn without butter? Heck, people are even putting butter in coffee to make bulletproof coffee. What I love about butter is that on its own, butter is plain tasting, even mushy, but spread it on bread and it magically transforms it with rich and creamy flavor. I am reviewing four of the most popular vegan butters on the market: Miyoko’s, Earth Balance, Country Crock Plant Butter and I Can’t Believe it’s Not Butter, it’s Vegan!
