Eggs aren’t dairy, even though you’ll find them side by side with dairy products. Besides gluten and dairy, eggs are one of the most common food allergens. But there are other reasons for not eating eggs, including being vegan, avoiding fat and cholesterol, and worrying about salmonella and antibiotics in chickens. If this is you, Just Egg is a great substitute. And unlike most refrigerated and frozen breakfast meals, it contains no cheese or gluten.

What is Just Egg?

Just Egg doesn’t come from chickens. Instead, it’s made from plants, including mung bean protein and onions. Carrots and turmeric give it a yellow egg-like appearance. It doesn’t contain cholesterol, which makes it an excellent replacement for eggs.

Varieties

There are three Just Egg products. The bottled product in liquid form can make an omelet, frittata, or scrambled eggs. The texture is fluffy like scrambled eggs. And it has a mild flavor that is highlighted by spices, vegan cheese, and vegetables. It contains no saturated fat and you can find it in the refrigerated section, next to the eggs.

My only warning is to use it before the “use by” date on the bottle or you’ll have a lumpy liquid that smells like broccoli gone bad. You’ve been warned.

The second product is Just Egg Folded, which is frozen. The package comes with 4 folded plant eggs in a square shape. It contains the same ingredients as the Just Egg liquid version, with only 0.5 grams of saturated fat per piece. You can prepare it in a skillet, oven, microwave, or toaster. It’s tasty on toast or alone.

The final product is Just Egg Sous Vide which are egg bites. There are two flavors, the first is inspired by America, which contains roasted potato and red bell pepper. Mexico inspired the second flavor with roasted poblano, black beans, and corn. Like the folded egg, you’ll find them in the freezer section. And you can prepare them in the toaster, oven, and microwave. Four bites come in a box and 2 bites contain 1 – 1.5 grams of saturated fat.

While the three products are similar, the egg bites are not low-carb because of the addition of vegetables. The liquid version contains 1 gram of carbs, whereas one folded egg contains 3 grams of carbs. In contrast, two bites have 14 -16 grams of carbohydrates. Still, if you’re not a big breakfast eater, they can be eaten as a small meal or snack.

Can be Used in Recipes

An additional benefit to Just Egg is that you can use the liquid version in recipes. Their website (https://www.ju.st/cook) has many recipes including egg and vegetable stir-fry, and blueberry blender pancake, which includes a gluten-free option.

Cons

However, there are three cons to Just Egg. First, it’s pricier than real eggs. Second, the egg bites contain soy, which is an allergen for some.

Finally, their website warns they’re made in a facility that processes eggs. But they require their third-party manufacturers to employ strict sanitation, inspection, and good manufacturing practices.

Conclusion

I recommend Just Egg for many reasons. It’s a great substitute for eggs if you are allergic to eggs or vegan. Unlike eggs, it contains no cholesterol and very little saturated fat. What sold me was the fluffy texture of real eggs and the mild taste. The three varieties give you plenty of options for making scrambled eggs, frittata, folded eggs on a sandwich, or bites on the run. You can also use Just Egg in recipes. And it’s also one of the few dairy-free breakfast options that are also egg-free.
